First Anniversary - Paper
Coming up to my first anniversary with WA! Since joining, I'm constantly amazed at the amount I'm learning about building a website that visitors actually come to on a regular basis...so, I'm very happy.
Because of my busy daily schedule I may not be progressing along with lessons/classes as quickly as the rest of you (or as I'd like to) BUT I'm publishing good, healthy content and continue to plug away at my own pace. Hey...I'm premium and yearly, which shows my commitment and I'm here for the long haul.
In the meantime...while we're all busy spending hours each day working toward our goals, remember that eating healthy can be quick and easy. Try this healthy sandwich that takes 5 minutes to prepare and is packed with vitamins and nutrients and totally delicious...any time of the day.
Ingredients: whole wheat pita bread, 1 egg, sliced tomato, cream cheese, spinach leaves, roasted garlic & herb seasoning, S&P
Directions: spread cream cheese on the pita bread, lay spinach leaves on the cheese then the tomato slices leaving a space in the middle where you will crack the egg. Sprinkle the seasonings on top and place the pita round on a microwave safe dish. Cook in the microwave for about 4 1/2 minutes or until the egg has cooked through. Fold in half and enjoy munching on something healthy while taking that next class.

I have blown an egg and thoroughly decorated my MW. Make sure that yolk is well popped before cooking.
BAHAHAHAHA - boy do I have a visual right now Dick! I have tears in my eyes laughing so hard. But I pity the one (probably you, huh?) who had to clean up that mess. That stuff seems to have glue in it after it explodes.....yes, I've done it too - that's why I'm laughing so hard!
Just be careful taking the egg out of the microwave as they have been known to explode. It's a good idea to prick the yolk first :)
While it's not happened to me...that's great advice to prick the yolk. I'd hate to clean up that mess...thanks :)
Congratulations Karen, being here for a year is something to be celebrated. Best wishes for your continuing success. Like the look of that recipe. Thank you.

Keep plugging, Karen! We'll all get there one day (leaning on chin in moment of daydream ;) )...
