I'm back!
About 2 years ago I had to leave WA as my sites reached a level that WA could not support. However this year, I have successfully sold out of those sites for a 5x profit (above the earnings I had already achieved with them).
So, now I'm back in startup mode and back at WA. I've hit my life goal of becoming a digital nomad (which was severely delayed thanks to the pandemic), and will be setting up a network of projects under a parent project: The Digital Nomad Challenge. The aim will be to demonstrate the realities of startups while living on the road, and to build a community of digital nomads to learn from and support each other.

This time I'm trying to replicate the process on a smaller scale, but across multiple projects, and planning to build a similar sized team to handle the multiple projects.
I'm hopeful that I can make the total > the sum of the parts, and leverage cross-marketing opportunities if/when they arise

Welcome back to WA and congrats on reaching (and surpassing a number of) your goals both here and with other services.
They were large, but also had become so recognised within their niche that they were official media outlets for a number of industry-specific events.
Due to Siterubix / Site Support's continued use of redundant PHP for an extended period, the next upgrade clashed with my theme and plugins and killed my sites.
Unfortunately, the issue took 3 days to resolve, during the leading industry event, for which my sites were media partners, and during which I lost quite a bit of projected business due to the outage.
At the time, site support was answering immediately so as to hit their KPIs of immediate response, but not resolving until the next day (or even later). Plus they were not actioning as per my requests (to roll-back to the previous version of PHP so I could resolve the theme clash and then upgrade PHP later.
Further, I was frequently having emails blocked from my clients' mail servers - an issue which I believe was later resolved, but only for premium plus members.
TLDR: It wasn't the size or number of sites, it was the prominence of those sites creating a need for real-time chat support, which I was able to make use of with BlueHost. Cost slightly more than WA premium, and with less features, but I had realtime chat support and dedicated email servers.
So as per my response to Dale, WA couldn't meet my needs for realtime support and email deliverability. Unfortunately, Premium Plus wasn't available until AFTER the event, and so I ended up with a fairly significant opportunity cost.
However, WA is still hands-down the best place to be for the building phase and for SEO-based e-business. Just not so much once you become a leading industry platform.
