Jubilation and Phase III - Beginning

Jubilation

I have been away for a month now due to laptop crashing and some major work on my brick and mortar business. Starting the Friday before Thanksgiving(US), I smoked one thousand pounds of brisket. If any of you have ever smoked a brisket you know how much work is involved, for those of you who have never smoked a brisket this is a very small part of what you have to do: trim the brisket of excess fat, marinate if required, rub the brisket with seasoning, You have to have your smoker at the right temperature(250F) for 10 hours or longer. This makes for a better tasting and more tender brisket.


I have been devising a line rubs made from herbal blends that are not loaded with sodium and sugar. There are so many rubs out there that are based either on salt or sugar that it is unbelievable. The number of people who can not have very much of either one is staggering. I now have five rubs that cover fish, poultry, pork, beef and vegetables and have four more in research and development. I am using a test group recommended by three cardiologist and nutrionists to see what kind of difference this will make in the overalll diet of the patients. It will also help in the authority of my niche when the results are posted on my site.


I am having to develop the exact specifications of the facility required by the Food and Drug Administation for the manufacture of my herb blends. This facility while parts of the process will be done by hand parts of it will be automated but the entire facility will be in a clean environment.

Phase III-Beginning

While all of this is going on, my wifie and I had our interview with the person in charge of the grant for the repairs to our home. She informed us that our home would be completely destroyed and rebuilt from the ground up. We will have the final verdict in January 2019. If we are approved the demolition of our home would start in May or June. The estimated time of completion would be in time for Christmas of 2019.


As you can see there has been a great deal going on away from WA. My laptop crashed and burned the week after Thanksgiving and I am having to basicallly take parts from various computers to hobble together something that I can use for the short term.

By using these methods or something similar, while you will not be guaranteed a particular outcome, your opportinties for success are increased greatly.

because I cannot consume salt. I look at herbs in a meat seasoning and buy the individual herbs. So I end with 20 different bottles of herbs, but no salt and sugar. A lazy way of doing things.

My rubs have less than half teaspoon of salt and no sugar. You could enjoy grilled food again.

We don't do a whole lot of brisket in Memphis, but I have won Memphis In May World Championship BBQ Contest for my shoulders. Would love to try out your dry rub. You can have "wet" ribs. I like mine dry.

The only sauce I ever bought in my life was Dreamland in Alabama. Vinegar sauce is the hardest category to win at Memphis in May. I got 4th out of over 350 teams just trying to get it like Dreamlands. Do you do contests? Have a restaurant?

I do not have an eatery at this point in time but I have roughly 500 people encouraging me to open one but I prefer to do specialty smoking instead. That way I can devote time to WA. I only have one sauce developed at this time and it is not vinegar based but honey based. I am going for a healthier alternative because of high blood pressure and have had great success with it.

WA is a walk in the park compared to running a restaurant. Especially if your entree takes hours and hours to cook. Put me down for some of your sauce when you have it ready.
