Could anyone give me some reasons maybe I’m overlooking as to why my two recent blog posts I’ve published have now been indexed yet it’s been almost 2 weeks.
There are many factors. Make sure your word count is above 500 and 1000+ is preferred. Make sure it's not duplicate content. Make sure you don't have noindex checked. Use fetch as google to request indexing and make sure you update your sitemap and have it submitted to the search engines.

So I've been giving it a lot of thought to kind of spice up my blog and just do a lifestyle blog rather than a single niche. I guess I was just looking so some input maybe some
A lifestyle blog can work for sure. You may end up getting sponsored posts from it as well. As you decide on each post's topic, you can do the keyword research on that single topic. It may take longer to build a following, but once you find your niche within that type of blog, you can do well. By niche I mean what angle will you take to express your opinions? What will make your lifestyle blog different from the other ones that are out there? To truly make your site a success, decide that first, then remain true to your vision.
Suzanne has a good point. I think that is a statement worth rereading: If your niche is quite broad, it will be harder to get targeted traffic.
You can start small and expand your subject as you go. That's kind of what I have done...started with personal experience and gradually added topics that went beyond that.

Starting out with a single niche is ok if it has room to build out later on. For instance, if you start in one small area of your "lifestyle" idea and build up your following that way. Then expand to another, logical area later, and so on.
