The first question is as I went through the training course about the niche process and getting it set up by choosing one of my own, can I have just one niche or more than one
I did the same thing, I build 2 different websites. I found later its time consuming to work on both websites. Knowing what I know now, build that one website/niche until it starts producing some income and then go on to the next niche.
Hello! The best way to look at is this:
1) build your websites one niches at a time. For example if it is for hairdressing then your focus will be on that period. You will then be catering for people who needs or want their hair done.
So the idea of multiply niches on one site would not be a good thing given you want overtime to be the authority in chosen niche if you will.
2) Choose a niche you know will not be convoluted and work at it. I know you have few passionate ones to work on.
Let's get going with what you have in mind. I am here and so is everyone else should you need help.
You can have as many as you want. I would focus on one niche until you get it going the way you want it and then work on another site if you like.
