I am not sure I chose the right theme, can I change it in my website builder after I have done the seo etc.?
The theme is just a lens that the content is viewed through. You can change themes without affecting the content, just how it's presented.
yes you can
to change your theme
goto websites>>sitemanager>>login
choose the user and login
then goto appearance >>themes
and you can add new - choose popular at the top and you get a number to choose from...
if i may suggest blocksy, kadence, oceanwp or neve....
most themes can be used for most niches...it is all down to the styling you want...
you can try this out on a test siterubix site - just create a free one and try out a few themes...see what you think of how you can customize them under appearance>>customize....

To change your theme, here is what to do.
You may go to Appearance > Themes and add new.
Input what you are looking for, install and activate.
Your content will be left intact; you may lose out on CSS styles and social media icons if, however, with a bit of tweaking, you are done.
We always recommend leaving a backup theme; you may do with the Twenty TwentyThree.
I hope this helps

I am a bit confused as to whether I start with a blank site or one with all the media attached
All sites are blank to start off with. The theme controls how the content is presented. So choose a theme and create content. If you don't like how it looks, try another theme.
The benefit of WordPress is that you can choose a theme you like, that meet your needs. Take a look at the themes at your WordPress dashboard: Appearance - Themes.
