Im assuming that they are pages. . . where do i go to categorize them?
An 'About Me' is a post, while a privacy policy is a page.
Posts go in the blog roll, and pages are static. You need to add your privacy page to a created menu in Appearance > Menus.
You can use the 'Post Type Switcher' plugin if you make a mistake. Go to the plugins tab, add new, locate, install, and activate it. Once changed, you may deactivate and delete the plugin.

As for categories, you can hover over your posts and click categories, creating as many as needed.
Those can also be added to a created menu as mains and subs.
Then, you can assign your posts to their respective categories. You can assign a post to more than one category.
You categorize posts, not pages.
But you shouldn't have to "assume". Log in to your website and see whether they come up under "Posts" or "Pages" in the left-hand WP menu.
