It depends on the theme you've chosen. If you have a "header" option in your theme's "customize" menu, you may be able to centre it, if not you're gong to need to add some custom CSS. Be aware that centring your website name could conflict with the positioning your top menu, though, which is why the two are usually well spaced apart.
What may be easier is to create a banner for your header area that contains your website name/logo already centred, and upload it as a jpeg to your site. Then there will be no menu issues etc.

I don't think there's specific training for this as it's more of an aesthetics issue. I find free online sites like Fotor helpful for creating banners, and Lunapic for changing a photo's size, colour etc. Lunapic is a bit fiddly to get the hang of, but Fotor is easier to use.
It's a bit of trial and error with creating your banner, getting the width and height right. You just have to play around a bit with it till you're happy. If you're not confident, then go to http://Fiverr.com and get someone to do it for you, and it'll only cost $5. Sometimes it's faster than trying to do graphic design yourself if you're not familiar with the tools.

That is really up to you. I have created a separate email, but it is linked to my personal. Should the emails become over bearing on my personal site, then I will separate the two.
I continue to go to my personal email. To be honest, I have an email account for my website, but I have not been able to get it to receive emails. Can't find any answers. So, I continue to send everything to my personal one.
