I think we'd need to take a look at some of your keyword targeted posts, see where they are ranking, and see what you can do to improve the rank or improve conversions.
A HUGE part of me making sales and having success online has been writing consistent content. The main thing I do is write one "money post" (a review), then write supplemental content to link to the money page.
For example:

Top Three 7-String Guitars under $500

Then all those posts can link back to your main money post and drive traffic to your affiliate links, as well as boosting your rank for that page.
For me personally, I'm not making what I set out in my goals when I first joined WA, but I've still been able to make some money monthly through WA and other affiliate programs I'm part of. I know I can make a bit of money every month from affiliate earnings.
I didn't know anything of affiliate marketing before WA, so I feel your post is aimed at someone like me.
Although I'm no where near giving up my current job, it's nice to know that the work I've been doing so far is actually working , and if I continue to work hard on my sites then I can really get some good results.
I feel, if you need to take time out, then maybe you should. Sometimes life takes over and there's only so many things you can commit to at once. I had to take time away from WA last year for personal reasons, and then came back earlier this year, and I'm seeing positive results now. It's a personal decision really.
I'd like to encourage you to keep going and keep working on your site(s) if you can, but if you truly can't, then consider taking a little time out for yourself, and return when you're able to.

The question I guess here is how much work have you done? If you have been at this a year, you should have no less than 150 keyword targeted posts on your website, 1,000's of comments and you should be in very good shape in terms of authority in Google.
At this point you should have 100's of keywords that you are excited about building upcoming content surrounding, you should understand all of the idiosyncrasies of your niche, which products and services are popular in your space, which ones aren't so much.
Have you focused on just one site, or have you tried to diversify and do you have several sites that you are working on?

1) "Buy" may be screwing up your rankings. Google tends to favor ecommerce sites for these types of keywords because what else can a blog say except where to buy it. (Although you used "how to", which should be in favor of you since you have a tutorial)
2) Google may be disregarding the "how to" part. "buy a second hand guitar" has a QSR of 137. Results are similar, so you may be facing the tougher competition here: http://www.screencast.com/t/P9rzcCumEg

Google might be thinking that longer and more popular posts on other keywords are more relevant than your short posts on specific keywords, which is why other people are getting the rankings.

Most of my posts are youtube guitar lessons, the written content is kind of an intro to the lesson and a bit of background, I then have Internal links leading to the next lesson and other relevant pages along with external links to other non-affiliate sites.
I could write a 1000 words plus but it would just come across as padding.
I try to keep the content as relevant and informative as possible.
Would you suggest a different approach?
You can do YouTube guitar lessons, and the videos will rank, but the pages won't if they just have a video and a bit of intro text. If you want the pages to rank, I would either write more content for the pages, or find other keywords.

I have targeted many low competition keywords in the past and have not even had a sniff of the first page for that exact phrase.
But, I usually find that I end up ranking for variations of that keyword that bring in just as much, and in most cases, more traffic than estimated.
To find what you currently rank for,head into Webmaster tools - search analytics - check the "position" box and then scroll down.

One of the problems with QSR is that it presumes Google will always prioritise those pages with the exact match keyword phrase above others. In reality this isn't the case since Google will also rank under that phrase any site that has authority and contains a link to that keyword.
SEO is a slow process and 50 pages in a competitive niche is still quite light - in a low competitive niche you should be seeing rankings though at this stage.
How are you checking rankings? Sometimes using a dedicated SERP checker such as serplab.co.uk will give you a more accurate picture and lets you add all your posts so you can have a clearer picture of your overall site rankings.

Social engagement is far more important to SEO than matching a keyword alone, and I agree that 50 pages probably isn't that much since you're going up against websites with hundreds.

How does your content compare to theirs with regards to the above points and also DA / PA & external links?

What I don't understand is that if the key word search tool tells me the QSR is 2, why am I not at least the second site to appear on page 1?
One thing I can think of is that in most posts your just linking to better content - usually someone else's video about how to do something.
So Google will be thinking, why bother ranking this site when the guy who wrote it says there's something better on YouTube and is basically telling people to go there rather than providing his own content.
Make your own videos. Also if you're explaining steps in, say, stringing a guitar, add photos of you doing each step.

There are thousands of sites about acoustic guitars. It's not a very specific niche. Your keyword might have a low QSR but requires people searching for that specific phrase "in speechmarks" - which is very rare for anyone to do.
And it also doesn't take into account what's known as Latent Semantic Indexing. These are synonyms and related keywords that Google also uses when ranking a site for a specific keyword. So although your kw might have a low QSR, the other terms you use on the page group it along with pages from much larger authority sites.

I like the site but there's a lot of competition. so the only way you'll beat the competition is by having the most in depth content. Which means longer content with your own pics & videos.

Surely almost any niche will have some big competition. Someone promoting pretty much any physical product will probably have to compete with the ecommerce giants.
I don't create my own video lessons because I'm not a guitar teacher, the service I provide is wading through all the lessons on youtube to find the best free lessons. Do you not think this is a good service?
I was under the impression rankings were improved if you used youtube videos, working like an external link and showing that I'm integrating with other sites. Does google really recognise that it's a lesson I'm using and that the information within the video is better then my written content? Can google even tell if it's not a video I've uploaded to youtube?
I'm just starting to understand latent semantic Indexing (although I didn't know that that is what it's called), it explains my issue with low QSR but no ranking. I've not heard anything about this in any training though.
You also mention using my own images, can google recognise the fact I'm using other peoples images and penalise me for it?

Or if I just wanted a video, I'd go to YouTube and find the most popular / highly rated videos. Watch them & if they were good, go to the site of whoever made the video.
If you want to beat a site like guitarfella.com , it'll be a matter of more & better content plus getting some good backlinks.
You should use your own, not plagiarised, images or if you want to take them from elsewhere make sure that's allowed.
