Well, no one wants to read a boring document as if it came out of an academic journal. That's why writers are writers and scientists are scientists, although on occasion one can be a scientist and a good writer. At the same time, the main thing about nonfiction is to impart information or knowledge and thus it's important to be efficient and not verbose with unnecessary flourish. It seems writing is a lot like conversation not only that you write the way you normally speak, but also that you think about the reader (just like you think about the listener). Therefore, anything fancy is not to show off but to provide amusement or to describe more clearly. It's also easier to write well if you're not overthinking. I read somewhere that some of the best writing is sometimes in emails. In an email, it's easy to be oneself because one isn't worried about being a "writer."
