Would it be wise to write my 'About Me' page as a beginner, and let my audience know that I'm a just starting out?

There is so much you can write about yourself. Of course, you need to be honest and authentic.
Look at yourself as being on a journey, that means you came from somewhere and you are heading to a certain desired place but not to stop but continue your awesome journey.
Who are you?
What you do like,
What do you do, and what did you do before that?
what inspires you to work hard?
Why do you what you do?
Would you perhaps love to help other people? In what way?
That helps?

I really think as a premium member I'm suppose to have access to some images in the WA platform.
If there are, how do I access them?
They are in Site Content.
However there are plenty of sites where you can access free images and I published a blog with a list of quite a few of those sites. Where To Find Free Images Enjoy your day.

I upgraded to Premium because there was promise of better themes. Now on Premium, all I see under Themes are just 4 Themes.

Hi - there are thousands! You need to click on "add new" near the top of the page, and they will appear. There is also a search filter, to help narrow them down to what you are looking for.
Log onto your site dashboard and navigate to Appearance > Themes. Once there, click on Add New. You should now see all sorts of options available. You can even find WP themes outside of WA and upload them for use (I did that with a pay-for theme I use for my WA promotion site).
