It completely depends on whether you are able to monetize it and turn a profit.
There will be thousands, if not hundreds of thousands, millions even, of people who have set up both 'single', and 'multiple' niche websites that have not been profitable. But on the other hand there is millions of sites online that are profitable.
So is it possible to make money from a multiple niche website?
Yes. Absolutely.
Will it be profitable?
That completely depends on whether or not you are able to make it profitable.

I think that if you can find a way to make those sub categories and tie them to your niche of education it should be fine and very intereting
It depends if it's relatable. You can combine a few, but it's not good to go too far out of your niche.
