My niche is R/C model aircraft and I am becoming an affiliate to a UK model supplier who only deals within the UK, would I be better with a .co.uk URL?
If you are only going to be dealing with people inside the UK then yes get a .co.uk extension :) It would be best if you did if that's the case

But I wouldn't let your affiliate programs you choose dictate what you are going to do. You are going to miss out on 100's of millions of people of you choose a country specific domain.
So like Anthony said, unless you plan on only selling to people in the UK then choose a .co.uk. If you want to target the world, you want a .com.

I was going to go with Men's Health over 50, but I a site on weight loss and diabetes, but I really fancy something fun, and Model Aircraft would be, but would I need to drill
I think that sounds like a fine niche. One with enough that you would have products to sell and that you could talk about consistently. I say go for it!
