I wish many of the other tasks to improve our site were this simple! Deleting things you do not use is an actionable step that will take you a minute. And it positively impacts your site in more than one way. Plus, it's good to build the habit of not keeping these old themes and plugins.
How do you do it?
Deleting plugins is easy. Go to the back end of your WordPress site. Click Plugins. And then click delete on the plugin you're not using.
For Themes, it's not so straightforward. Check the next page.

I have way to many themes, I will be cleaning off.

Great advice Henry. We really can accumulate masses of plugins which can slow out website speed. I've paired mine down to about 8 which keeps things running smoothly.
If I want to try a new plugin I check my site speed first and then load the new plugin and check my speed again.
