1. To improve security:
Leftover themes and plugins increase the opportunity for malicious guys. Why leave things on your site that may make you vulnerable to attack?
It is easy to forget about old themes and plugins you tried and did not use. But they constitute an opening for security issues.
2. To improve performance:
By deleting old themes and plugins you're not using, you reduce complexity. And thus, make it less confusing for other people that work on your site.
You also reduce the size of your backups.
And you could even get a performance improvement.

I'd heard extra plugins could slow site but not about the hackers.
I have way to many themes, I will be cleaning off.
I enjoyed the whimsical "continues next page" .

Great advice Henry. We really can accumulate masses of plugins which can slow out website speed. I've paired mine down to about 8 which keeps things running smoothly.
If I want to try a new plugin I check my site speed first and then load the new plugin and check my speed again.
