I'm not sure how to begin to choose a name for my site. Any ideas are welcomed.

I'm not really sure what to do.

Everybody is going to tell you to just do one at a time.
I say it depends on how much time you have and how good of a writer you are.
I'm a pretty good writer and can come up with content pretty easily. My challenge has been in the blog/website design phase. So I figured I might as well do three at once. Each step of the creation route takes some time to do (as you go through the certification courses). For me, I figured why not do each step to three sites as opposed to doing it to one site and then going back a few months later and doing it all over again.
So basically, it all depends on how good of a writer you are, how fast you can create quality content, and how much time you can dedicate to building your sites.

Thank you Brad. This is the most helpful peace of information I have found and it makes so much since for my "stay-at-home mom" life style.

You can work on as many niches as you like, but I tried doing four niches at once and completely ran out of steam and lost all interest.
I'm now concentrating on only one of those niches and I'm learning more than ever. Lessons learned will be applied to the other niches at a later date.

You can do both niches at ones and a lot of people do. Personally I don't advise it. You are better starting one niche with one website and developing that first. Otherwise you just make mistakes on two sites at once.

While you can have 2 (or more) niches on different sites, it's recommended that you start with one. Trying to write content for 2 sites when you're learning is more likely to result in 2 half baked sites and neither getting ranked. I'd pick your favourite and go with that until it is well advanced, then think about adding another niche later.

I was in your shoes a few days ago!! I ended up choosing the niche where I could write and develop more. Hope it helps! :)
