Not sure if you want to stay with host gator or not, but I also had signed up with host gator before I found WA...I just gave them a call and said I wanted to cancel and they refunded me.
To answer your question...no plugins are automatically included in the build. However, Kyle does walk us through 4 plugins for us to install in the beginning of the course lessons that he recommends.
1. All in one SEO
2. Akismet
3. Page exclusion
4. Si captcha
All other plugins are up to you. As a premium member you have access to all of them. Just depends on what you want on your website, you can search for them.

no...google analytics is not a plugin. You can just search for "google analytics" and you can sign your website up with that

themes, plugins, etc are part of wordpress and not restricted to WA members. You can use those on your own site.
The things you get at WA that you can't get anywhere else would be the training and support!
All the themes and plugins here are available to you as well even if you are hosting through hostgator.
