Am I satisfied with my first week?

More or less. The "More" is getting through Level 1 and part way through Level 2, learning a lot along the way, getting my new domain, and setting up the structure for my new website. It's also been great to meet so many friendly people.

The "Less", is finding a theme that does what I want it to do, and figuring out how to maximize its capabilities. If I could afford it, I'd have chosen Genesis, but within the catalog of free themes, I picked "evolve" after trying a couple others that just didn't have enough flexibility. I have some content already, but my first post is basically a placeholder till I get more information on the product. I also have to go back and tweak what I've already written in order to add some of the abundant long-tail keywords in my niche which have low competition. Most of my graphics will be original, but it will take a while to collect and produce them. I've already completed my 10-day goals, and am working on the 30-day ones, but not going as fast as I'd like.

I don't know enough to offer much help yet, but will try to do my share for you in the WA community. I applaud all of you who've taken the first (or many) steps on the WA path, and hope you will achieve success!

Choose a theme that is simple, ideally with a white background and black text (as this is the most readable).

I tend to avoid themes with too many bells and whistles as the focus of your website will be your content and your content will make your website look visually appealing to your audience.

So choose something simple, yet elegant and if you ever need to change down the road, you can easily do so within Appearance => Themes.
