So, some of my low hanging fruit keywords are ranking now, but way on down the list. Does targeting the same keyword in multiple posts help boost ranking, or does it improve w

Ranking will improve with time as you add content and gain google trust. I have a low QSR keyword on Page 1 that took 4 months to get there. Don't target the same keyword because you'll be competing with yourself. Each page and post should have a different focus keyword to broaden your reach and opportunities for ranking.
No. It will make it harder for you to rank for that keyword because Google doesn't know which post you really want people to see.
Take the content from multiple posts and just write one longer, more detailed, better post focused around that kw & related synonyms etc

Is it better to publish every day, or several times a week? More thought out posts are better for sure, but how much does frequency count? Are shorter, but more posts helpful
Consistency is the key to success not just with indexing, but also ranking and developing a following of readers. - Joy
We have been doing a 30 day challenge of one post per day on our websites and it works. But being able to keep this kind of momentum up is unrealistic if you don't hire writers. Short or long posts depends on the value you are giving. Remember who you are writing the post for and their concerns. Good luck.
