The old published post would no longer have the portion that I cut and pasted.

You can’t plagiarize something you originally wrote, but avoid duplicate content whenever possible.
No. Plagiarism doesn't normally apply to content on the same site anyway, but especially so if it's a cut, not a copy.

The aim here is to make your posts relevant to the topic, they're covered well, and you've done them enough justice.

Can I keep my siterubix website invisible on the internet until the website is ready to go live?
Once you build, it is live. I would not make it invisible vs. publish content as soon as I am done.
