Saturate Yourself with Knowledge
Long ago I found the secret of writing about something I don't initially know a whole lot about. I read, read, read information about the topic until I'm somewhat saturated with it. Then from the overflow of my brain the words will then come much more easily when I sit down to write out the topic.
When you're "full" of your topic, it will be much, much easier to talk or write about it. It's a simple concept but extremely effective.

That's how I do it too. If I don't know about something, I research it out until I'm comfortable with the subject enough that I can discuss it with a person knowledgeable in that subject.
It's helped me immensely in my businesses and as a chef. Clients are always impressed when you can discuss their area of expertise without being like a know-it-all. In return, I've learned a lot about too many subjects to enumerate.

I always advocate doing lots of reading about topics you're unfamiliar with, I know it helps me as a writer :)
