So I just found out that Google is omitting most of my posts from Google search results...its starting to make sense as to why my impressions have gone from
The fact that you are creating How To guides doesn't mean that you should have similar content. Unless you are not creating guides on the very same topic all the time ...
I couldn't find your site on your profile ...
Resubmitting a sitemap is almost pointless if you haven't changed the site structure or architecture. As you said those posts have been already indexed ...
And I have the same questions as Steve ...
They are similar "how to guides"
How to blog about alaska
How to blog about Arizona
How to blog about "insert topic"
So not all of the content is the same. But some of it is.
With so many similar titles especially with similar content (!) it could be an issue
But you can check out the total number of your indexed pages in Google Search Console
I go to Google.com and search "site"www.mindzunleashed.com. Only a few of my posts show up.
Then on the lat page of the search results it says
Then it says
In order to show you the most relevant results, we have omitted some entries very similar to the 70 already displayed.
If you like, you can repeat the search with the omitted results included.
When I repeat with omitted results the rest of my posts show up...

Google site:mindzunleashed.com (with the colon and no spaces) to see exactly what has been indexed.
I see that most of your posts are titled "How to blog about..."
Perhaps your posts are too similar in content.
I've been talking with Zed and he thinks the same thing. If you both think that, looks like imma have to start over.
Do you have any suggestions Marion? You can message me if you want.

I recently decided that my niche was to broad and I needed to go more narrow. As as a result I deleted 23 posts that weren't relevant anymore and a couple pages.

Sometimes, if the deleted posts and pages were the most ranked posts and pages on your blog, then your SEO will surely be affected.

Have you created and resubmitted a new sitemap?
Have you removed the given URL's from the Google index?
Make sure you redirect your deleted post to a 404 page or homepage or the most relevant page. Even though you deleted the posts, Google still crawl your site and listed the deleted posts as 404 error. You might lose traffic if someone click on the links, further it also give a bad impressive to your visitors.
Monitor your GSC closely, is there any 404 error occurred. If yes, then simply redirect the deleted post to your homepage or any relevant page in your site. 301 Redirect Made Easy Customize your 404 page and redirect to your homepage
Well, as suggested by Zsolt, resubmit a new sitemap to GSC and see what is the outcome. Then let us know.

I see what has been indexed...but can't things be omitted and indexed?
