I have just employed someone to be managing my sites on a daily basis. I need to know what level of access I need to give the admin while retaining control of the site and it's

Click on the Website Tab at the top of Wealthy Affiliate homepage.
Scroll down to Site Support to create a ticket.

Hi - here is a basic overview of the different user roles and the permissions associated with each one:
Subscribers can read comments, make comments, receive newsletters, etc., but cannot create regular site content.
Contributors can write and manage their posts but not publish them or upload media files.
Authors can publish and manage their own posts and are able to upload files.
Editors can publish posts, manage posts as well as manage other people’s posts, etc.
Administrators have access to all the administration features.
So, basically, unless their only task is to manage the posts on your site, then you would need to give them full access, which of course, means that they can change anything!

You add them as users and give them privileges.
They can log in to the websites independently
[domain].com/wp-admin - but you have to collect their credentials via the site manager.

To increase the size of your font, go to your Dashboard, select Appearance and then Customize.
For me, the size of the font and colour of text is very important, if it's too difficult to read, I find what I am looking for on a site that is easier to read.
For the clickable elements, just space them out more, as suggested by Phil in Live Chat.

how do i resolve the problem of embedded videos not playing as it is making my training courses unbearably difficult

Are you using a phone or a computer? If it is the latter, what kind of computer do you have? What browser are you using?

what device
what browser
what addons for the browser ...popup blocker or ad control addon
some addons are just not compatible with the wistia player
are the popup oming up but the videos not playing
are the popups not coming up at all...
as you can see i can ask loads of questions which i cannot answer without your help...
i hope you get it resolved
