Hey, guys! Crazy question, but it doesn't hurt to ask:

Does anyone know any doctors/healthcare professionals that specialize in holistic, naturopathic, or any alternative

Have you searched on social media? Most poeple will be happy for the exposure. I'd write up a form letter, then do some research on the top 10 people in the niche or industry. Send them a personal letter and let them know what you're trying to do. See who responds!

Okay. So the leading expert in my niche, adrenal fatigue, is a doctor that's been treating this issue for years. Not only that, his website is ranked #1 in google. I have purch

I always have been told to read what the experts say and then write content like you were telling your younger brother or sister in your own words. Works for me and I don't have a younger brother or sister ha..ha.

In any health related niche you are going to get information of a medical nature which appears to be written by a medical expert that doesn't mean that he could communicate well with people. If you know your subject you should be able to write a title such as
"the main cause of adrenal fatigue in teenagers"
I nothing about adrenal fatigue and absolutely clueless with the teenagers suffer from it but I think you get my drift. Do your keyword research well choose the main keywords and write about your topic without consulting someone else's work. That way you should be able to write unique content which contains all the information you need because you have done the keyword research. Hope this makes sense

I was told that if you read something, and can write about it without looking at the page you just looked at, that it is now YOUR knowledge, and you can use it as you please.

I would avoid talking about any proprietary or 100% unique information to him without referencing the guide or pretending that it's your idea, but that's about it. As long as you are not "rewriting" the guide, you'll be fine.

Do I need to interview experts in my niche in order to build credibility when developing my website/blog? Overall, what I'm asking is this: How do I build credibility?

You do not need to do this, but it's a great way to establish authority in your niche. I would get your website set up with some initial pages and blog posts before you start interviewing through, just so you have something to show.

Part of establishing authority is just creating a body of work within your niche. Publishing regularly and providing insight on topics are great too. You can also start being active in social media circles related to your topic and that can show that you are knowledgeable/interested in topics related to your niche.
