And we all know how hard it is!

So from what I understand when people leave comments on your blog posts it helps show Google that your content is active and can help in ranking. Assuming this is true, will interactions with this plug-in also have the same effect? Thanks :-)

If you have a Google Analytics (which "records" everything) account connected with your site, yes.

My only question is who will see these results? Just us website owners or the general public too?

OK that's 2 questions but, I'm not sure I would want the public to be able to be influenced by any negative responses.
