So ...

You need to know that user role capabilities are defined explicitly, so if you remove a capability from a given user role, it will NOT come back unless you explicitly define it again!

In plain English: capability changes remain in the database after plugin deactivation!

So, if you want to revert the changes, you'll have to "give back" those permissions. In other words, you'll have to repeat the process and check the unchecked box(es) before uninstalling the plugin.

If you made several changes and you are not sure about them, go to Tools => Capability Manager and use the reset link to re-install the default Wordpress settings (before uninstalling the plugin!):
