A few more things you should keep in mind ...
- posts moved once cannot be retrieved back!
- the plugin won't allow you to move categories to tags or tags to categories
- there is no such thing as optimal number of categories; or, if you want: the optimal number varies based on the complexity of your website
- the golden rule: for the sake of usability, it's best that you utilize sub-categories and tags; however, the only reason why you'll want to add sub-categories is to make it easier for your readers to find a given content type; so don't create a new sub-category when a simple tag is enough to micro-categorize your content
- adding one post to multiple categories won't grant you any SEO benefits; if you think it helps your users, then you can add one post into multiple categories, but otherwise is pointless ...
- there are no SEO advantages in using categories over tags or vice versa; they are meant to work together
