Days? Months? Years?

It depends on the niche, traffic, and other stuff. Nobody can answer this question for sure. But the content is very important. I'd suggest building a solid content.

I need more clarification on what a Niche is. Could I do an overarching approach of the subject? Such as one website that finds smaller niches and puts them together?

Try and think of something you are really passionate about and can see yourself blogging about at least 3 times a week. You might want to think hard about how big of an audience VR currently has. If you think you can get into some reviews and discussions with out really running out of things to talk about and can help people in the VR community, I say go for it.

Google is so great. Try a search for ideas, go for your strengths in the knowledge of what you know about VR, You'll get there

My original idea was to write about how I play support class characters in video games. But there wasn't much or any traffic at all in that category.

You definitely have more content with VR than going into being support class characters. Think of the oculus rift, the PSVR all that type of hardware. What makes them tick? How does it get you into the VR? What kind of games are there? You can go into VR game reviews, hardware reviews, accessories if there are any. You have a ton of potential with that!!
