A welcome page is always a great idea.
As far as posts go, you need to decide on that.
If the post is very long it is better to have a summary.
I never do more than 5 posts or summaries per page.
I think that can be entirely up to you and the creative side of you. However, if you are not sure go and visit some very popular sites and compare them. See if they have any similarities. :)

I prefer to have my blog roll, showing post excerpts. This way your newest content is always showing on the front page.

There are people in this niche and various aspects of it. It is vast and within the sustainable life niche there is literally 1,000's of smaller niches, from making organic soaps to DIY solar energy.
Lol ok i got you. in a way mine is a very similar niche. Mines more of the natural health genre.

Write down 10 things you are interested in or passionate about. Then prioritize them. Then take the top 3 or 5 and start writing pros and cons. That may help you narrow it down.
Also, what is your heart telling you? If you had to decide RIGHT NOW!...what would you pick? Not sure if these ideas will help but like Nathanielle says, let's brainstorm.

I've been brainstorming I've decided that I mostly just want to help people ... that or talk about comics. ha!
I've been considering sustainable living which I think could tie into earning online, going green etc. However, I'm not sure if it's too broad of a topic or not. And although I'm passionate about living a self sufficient life I'm not extremely well versed in the topic. I just built my own green house last year from recycled material and have done the usual switch to energy saving lights/electronics/appliances etc but I wonder do I need to be an expert in something in order for it to be my niche?
I don't think you have to be an expert but you do need to be willing to learn and become the expert. A self sufficient life could be very interesting but make sure you narrow it down to something specific, like you say, building greenhouses from recycled material. The whole green initiative is big.
You don't have to be an expert, you do have to have enough interest to be able to do all the research needed. If you built your house from recycled materials it sounds like you have a great deal of knowledge in going green.
Not my house just a green house lol I am a carpenter by trade so learning about the new green applications for building is something I have to keep up on in this business so I already spend a lot of time reading articles and going to seminars on the topic. I also have a keen interest in learning about it and have been trying to lessen my carbon footprint as much as I can with the techniques I can implement now. Either way there is no failure for me only lessons to be learned :D

the content you use...
Think of pursuits or concepts you like to talk about or have conversations about. And try to see if there is any marketability in it.
What were some things you were thinking about? It doesn't have to be a "passion" as long as you are interested in it, I think it's OK. Sometimes it takes time and research to develop a passion for a topic.
Maybe we could help you refine your current ideas a bit.

So I'm wondering can I contribute my own research to a site to fill this niche or should I already know something about this so I don't just go in blind. Should I promote the fact that I'm essentially a newbie in the area of green living or try to play down the fact that I'm kind of learning as I go?
Researching your own stuff and posting results is a great way to make your site unique. All of these are great niches.
1. Great niche, maybe a bit tough to start in IMO.
2. Good one, but needs to be refined. What kind of travel?
3. Perfect candidate for bootcamp training course
4. Self sufficiency, disaster planning, these are very popular topics these days. Great source of tutorials, content ideas, and social power
5. Green living is also a good one. No need to be an expert. Learn as you go, take people along for the journey! Share what you learn.
I'm not sure I would put them all into one site...but choose ONE of the topics and turn it into your first site.
