Stay published and keep building out your site. No one will find your site unless you give them the URL or share it on social media and that's because your site is new.

NO, don't un-publish. LOL, that will just make it worse on you from Google's point of view. Google doesn't know if you are finished with your page or not. There isn't a person at a computer reading your posts to check for quality.
My advice, is spend all the time necessary making each page great. Don't move on to other pages until you spend enough time on the page you are working on.
Then, move on. The number of pages will add up over time.
By the way, publishing your post even before it is best to publish isn't a critical concern. Google likes seeing content updated and refreshed.
However, for your reader's concerns, you want to publish your page once it get's at least to the 85 - 90% mark. Between 90 - 100 % there is always room for improvement.
