I am facing similar challenges on deciding but please don't look for perfect idea. The perfect thing would be to make a start. Lets say start with what you want to write about the teachings of bible and that way you would learn along each day.
After few months down the line you would be in a better position to make amendments to improve the things. Even you can start on a new niche.
I had a fruitful discussion on this with my wife yesterday and she convinced me to just make a start and don't think too much on niche :) I think that's the best way to learn .

Hello everyone: I've started to build my website on Travel in Europe With Me. I spend 19 years in Europe and visited some interesting sights. I will be focusing mostly on Castles and some of the history. Thank you all for your help. I'm still thinking about eventually doing a website on Bible study.

Hello friends, I've decided to go with the "Travel" niche. I've travel a bit while being a military wife and I'd like to share some of my experiences with that. Once I can get to a second site, then I could possibly do the Bible teaching, or the foreign languages. Thanks for the help.

I agree with Susan, below, it might be the best to delve into a bible website, although with a different slant;

What the Bible says about what is happening in the world right now. I am not talking about going all political but some of that could help people wanting to know about end times and what is going on, right now as it might fit in....

You can do two websites. One on the bible and the other on languages.
I would start with the bible, if I were you, given the fact that you have been teaching bible study for so long. You will not be stuck for content since you are very familiar with that topic.
Learning all the steps to develop a website will occupy enough of your thoughts. Creating content will be the easy part for you.
