Yes - they do different things. AIO is all about SEOfor pages and posts and the adsense plugin allows for the adverts.

Yes, as much as possible, minimize the plugins running in your site because, too many of them will affect loading speed which is bad for a website.
You can have AdSense ads without installing AdSense plugins by choosing a theme that's already optimized for AdSense. There's one theme that I like, the Super Ads theme (Lite and Pro version). You only set up AdSense codes once, and the ads appear automatically in every post you make.
