Salad Bonanza
Salad bonanza, yes you heard it right, salad bonanza. What is salad bonanza? Salad bonanza is a group of salads I love to eat while dieting. The great thing about these salads is they are filled with nutrition unlike most salads that add iceberg lettuce which has no nutritional value. So let's start with the greens produced to make you a beast.
Greek Salad
Ingredients
- 4 cups of organic cucumbers
- 2 cups of organic cherry tomatoes
- 1 ;cup of organic garbanzo beans
- 1/4 cup of organic red onions
- 1/2 cup of organic black olives
Directions
Place the 4 cups of cucumbers in a large mixing bowl along with 2 cups of cherry tomatoes, 1 cup of garbanzo beans, 1/4 cup of red onions, and the 1/2 cup black olives and mix together. It's just that simple and it only takes approximately 10 minutes to prepare.
Home-Made Balsamic Vinaigrette Dressing
Ingredients
- 2 tbs of organic extra virgin olive oil
- 3 tbs organic balsamic vinegar
- 1 tsp organic dried oregano
- 1 clove organic crushed garlic
- 1 large pinch of sea salt
- 1 large pinch of black pepper
Directions
Place the 2 tbs extra virgin olive oil in a small bowl along with 3 tbs balsamic vinegar, 1 tsp of dried oregano, 1 clove crushed garlic, 1 pinch of salt, and 1 pinch of black pepper. You will then whisk ingredients together and drape over your Greek salad and mix everything together one last time.
Quinoa
The next salad is absolutely one of my favorite salads and it may be due to the fact that it contains one of my favorite seeds, quinoa; When quinoa is cooked it has this crunchy buttery taste that makes me completely forget about issues I have with craving rice. It is relatively a good source of fiber.
Quinoa is a complete protein source that provides all the essential amino acids. Moreover, a good source of antioxidants and minerals causing many essential vitamins to store into the body. It's known for lowering blood sugar levels, assisting in weight loss, and it is also gluten free which protect those whom have allergies.
Tricolor Quinoa and Bean Salad
Ingredients
- 2 cups of tricolor organic quinoa
- 1 cup of organic red peppers
- 1/3 cup of organic scallions (diced)
- 1 chopped organic avocado
- 1 cup of organic black bean
Directions
First place the 2 cups of Quinoa in a mixing bowl along with 1 cup of red peppers,1/3 cup of scallions, chopped avocado, cup of black beans, and mix together. Preparation time is 6-8 minutes. Now it's time for the dressing.
Home-Made Vinaigrette Dressing
Ingredients
- 2 tbs of organic extra virgin olive oil
- 1 clove of organic garlic (crushed)
- 1/4 cup of freshly squeezed organic lime juice
- 1/8 tsp of ground cumin
- 1 pinch of sea salt
- 1 pinch of black pepper
Directions
Place the 2 tbs of extra virgin olive oil in a small mixing bowl along with 1 clove of organic garlic, 1/4 cup of lime juice, 1/8 tsp of cumin, 1 pinch of sea salt and 1 pinch of black pepper, whisk ingredients together and pour the dressing over your salad. This dressing should take no longer than 5 minutes to prepare.
Don't forget salads are your best friend especially while dieting. Salads have many healthy benefits and are filled with several antioxidants. They help to lower cholesterol and assist in healthy digestion. Adopt a healthy eating pattern and your results will be worthwhile.
