A theme is just a lens that your site is viewed through, so changing themes doesn't affect your content, just how it is viewed.

Given that you've already received the BEST advice from Frank (aka FrankB-1), I am only suggesting that you read over Rob's advice when deciding on a new theme to use.

Hey James! I’m in the middle of changing my website as well.
Put in a site support ticket for the site you want to make changes… and ask for test site. They will make a site rubix site that you can make changes to. Then let them know when your done and they’ll switch it over to you original site name.

Take a back up of your site before you start to change theme, so if it all goes pair shaped.
I would recommend Kadence theme it loads fast and is easily customizable to anything
Although i simply find it easier to make a backup, Frank is correct about a staging site. Whatever is easier for you

Going from one extreme to another could very well be problematic.
Have site support create you a staging site, which will be a clone of what you have now.
Make all your changes on the cloned site, which will not affect your original “online” site in any way.
If and when you are happy with the results Site Support can transfer the staging site to your original online site.
