Should poorly ranking articles be replaced with better versions? Or is it better to leave the poorly ranking article and add another one utilizing the exact keywords?

You could try improving the article itself using AI.

Is it common to have the same article go up and down in Google page rankings like a yoyo every two days or so?

Google's algoritm undergoes major updates frequenty. In-between, there are minor updates that they didn't announce.
Don't worry about daily fluctuation. Rather, focus on creating helpful content that matches search intent.
Long term organic visibility is the goal. That said, don't rely on Google alone.
When you think about just how vast the internet is, with all the millions of pieces of content, and the millions of people writing content, building websites, deleting websites, etc., yes, fluctuations are to be expected. There's a ton of factors at work, and the real key is to keep putting out content. The more hooks you have in the water the more fish you'll catch :)
