eCommerce Categories, Subcategories, Parents, and Childs.

So I am in the process of creating my eCommerce page. I've been working my way through, getting the plugins I think will help with the process. Then I get to the categories and subcategories point in my efforts. I've stumbled my way through it and have made some decent progress. But now I'm at a point where I'm asking myself "how granular do I want to get?"

At what point to I need to pump the breaks and realize enough is enough? I want my site to be user friendly, but at some point won't all of the subcategories become overwhelming? Not to mention the fact that I have to assign the categories to the products, so say my site is going to have a thousand products, that is going to be considerably time consuming.

Aarrgghh!! I'm so close to the point of launch, I just don't want to cut any corners. Anyway, this is a purge of thoughts (only a small fraction of what is rolling around my brain). Any thoughts, comments, suggestions are welcome.

Ah try not to over think things it can be one of the things that can trip us up so easily like the say just put it out there.

Thanks for your comment. I'm just worried that not enough preparation on the front end will cause complication once the website is live. By adding tags, categories, sub-categories etc. later on how much extra work am I creating that could have been prevented? Or can it be?
