A Gluten Free World
200 million meals last year alone were ordered gluten free or wheat free in the USA .Times are changing.10 years ago about 99% of the population really had no idea what gluten was and the effects it can have. I have been a chef for 30years and for nearly 25 years never had anyone order a gluten free meal. So what has happened?Something weird is clearly going on. Researchers initially attributed the growing number of cases to greater public awareness and better diagnoses. But neither can fully account for the leap since 1960.For now research continues into this global disease which seems to be increasing by the millions every year.For now we have so many gluten free products and its increasing every year with billions being spent on gluten free products each year.I have introduced a gluten free diet into my family and one thing which has happened is I no longer get heartburn which I have had from my early twenties. I have taken all sorts of chalky tablets and milky drink to combat this and nothing worked.For now I feel one benefit but will continue to let you know how I am going against the grain.David
