It's usually just the images that the demo has that gets you thinking differently. Just go with something really simple and focus on building out your site with content instead Wilber. You can worry about the cosmetic part later.
I agree - I was like - "what the heck!". I'm a visual person so I too wanted to see what it would look like. At the end, I did a demo view and winged it to my best "guess". The good thing is, if you don't like it, you can change the theme but do that at the beginning. Good luck.
