Personally I look at many of the 'About' pages to sites I visit and I'm sure I'm not the only one...
Yes, they're a great way to build trust. Everyone likes to know who they're doing business with.
What are your reasons for starting your website? What do you want to help others with? What problems within your niche do you have solutions for? Why are you the best person to help solve these problems for your visitors?
These are the types of things that can be discussed within your About Me page.
If you have no interest in your niche it will inevitably show through in your writing. If you have having difficulty writing about why the niche you've chosen is important to you then sadly you may need to rethink your niche some. There must be some topic or hobby that you enjoy and have interest / passion toward. What do you like to do in your free time?
