I would make sure you use a plugin to help with SEO like the All-In-One SEO. This will take care of a lot of things "in the background" for you.
An idea to keep your site up with fresh content would be to make your homepage a blogroll and post to it a few times a week or so. Provide helpful posts, introduce new products, mention existing products, talk about how awesome the t-shirts are, etc...
That's just a quick brainstorm. Let me know what you think.

Yeah I think you can do it and build up the business. Like you say, a t-shirt business may seem hard at first, but if you have found rankable keywords with Jaaxy or another keyword tool then you do have something to build up to.
