Step 3.
Write 2 paragraphs for each remaining interest. Take note of which interest you were able to write about with ease and which one gave you difficulties. The one you were able to write about with ease will be your niche and the other one will be your sub niche. Meaning when you run out of something to write about you can use your sub niche as a buffer for your blog.
You can then separate them in your blog by categories.
My current blog www.everlastingkaizen.com is about personal development but for me travelling is also part of my personal growth. Which is why I am currently doing both. Self-development and travelling for my blog.

Right now I'm choosing free subdomain... It's not possible to convert that to my own domain later and the posts also get wasted if I post in that blog...
