How do I create a domain specific name for my
dmoain that I already purchased? For example myemailaddress@mydomain.com
As far as I know, once you have bought a domain, you cannot alter it any more. You would have to buy the specific domain you really want if available.

I want to do so though without including my name, any suggestions on how I could go about that and still show the reader I'm trustworthy?

Well Pharah really I'm the same way. Don't want to make things too complicated. But if you form a LLC limited liability company I don't
think your real name would be necessary. Because people seem
to trust a corporate type of company over a individual company.
It shows them you are serious about what you are doing. This is
only my opinion. And it may work for you. I'll chat with you later
about it if you want..
Use either your first name like mention below, or you can use a Pen name on your sites. Some of the most famous authors and blogger (and even actors) use pen names so that is fine if you don't want to share your real name.
Make a contact page or an about us page instead, with your web-email, and g+, FB, and twitter account see for examples on http://goo.gl/IRR3vs
If it's not your real name, you wouldn't be honest. Are you trustworthy? How about just a first name?
Okay...but you want to build relationships with your visitors. How else can you do that? A lot of us didn't want to use our names but it's actually okay.
Thanks for that advice. It's just that being a newbie sometimes your bound to make mistakes. I didn't want that linked to my professionalism and cost me.

I think a messenger service is like Skype or Facebook chat, a handle is your Skype name.
