Wordpress plugins - which ones to use to increase SEO???
I I just started my path to create a niche site; found keyword> bought domain>installed WP and done some tweaking on WP settings. I am sure there are some good plugins helpful to increase webistesite SEO, and of course it's not difficult to find them on WP plugins directory, but I am also sure some are better than others; so I'd like to ask WA folks more experienced than I, what they reckon are the most effective ones.

I use SEO ultimate and also use All In One SEO. No issues so far and SEO Ultimate is well reviewed and has a lot of cool features
I also use SEO smart links to automatically link between pages.
I prefer the Platinum SEO Plugin and it allows you to migrate from All-in-One.
As far as themes I have tried about a dozen of the free or cheaper ones and have three I like depending on the niche I am working with.
Suffusion by Sayontan Sinha - Lots of control and tons of bells and whistles. Larger sites.

If you already have All-in-One installed there is a feature that allows you to populate Platinum SEOs settings with data you have already set up in A&O using just one click. From there you can do additional tweaking in PS. Basically it is an upgrade from A&O to PS.
All-in-one SEO is kind of a standard plugin to add. Depending on the type of site you have, some kind of social-sharing plugin would be good to make it easy to get your content out there.

yes I always have All-in-one SEO installed on all my WP sites, just thought there could be some "secret weapon" plugin to boost SEO. I also use WP Ping Optimizer. I take the chance to ask you something about themes; I am struggling a bit with theme customization since I am not fit that much to do CSS adjustments. Would you suggest me any WP theme suitable for a clean niche site that can be easily set up? I usually look for the option to remove as much as possible all features I don't need (breadcrumbs, navbar, menu, etc)
Send a PM to Apina here in WA. He does a lot of CSS/Wordpress modifications and has reviewed more themes than I have. Someone else might be able to give you some suggestions too.
The only ones I've really used are Thesis (paid) and 2010/2011 (free). I don't use a lot of options either but those seems fairly clean so far.

I like Yoast Wordpress SEO, you get a green light when SEO is optimized, also things like readability, keyword to content ratio etc. a lot of my keywords now rank page 1 and 2 since changing from All in one SEO. Of course, I'm also following the steps here, like adding quality content and doing keyword research. :)
