I did a Google search on "taxidermy" and it came up with Adsense ads. That means people are paying money on this niche. They don't continue to pay money unless there is a market for it. It seems from an initial Jaaxy search that the top level term is too competitive. But you should be able to narrow the focus and really make it work.

I would definitely go after your passion. Chris gave you the link to how you can make money with your wordpress blog. I would have a good read at that. There's nothing worse than trying to keep a site going that you don't have any interest in.

I say do it. I bet you fill a void and make money at the same time.

I'm sure the niche is big enough and when it's that targeted there is potential. I wouldn't worry if a niche is big enough. There's people all over the globe looking and searching for information, even on taxidermy. :)

If you can provide content that suits your audience and monetize it after you get the traffic flowing, I'm sure you'll do great. And since it is your passion, it's perfect because it way easier to write and talk about something you're passionate about.

If you love it just go for it. There are so many people online that no niche is too small. having a REAL passion for your niche would put you ahead of your competition instantly.

There are many ways to monetize your blog, so as long you can get visitors, I am sure you will monetize it quite well.
