I am going to tell you the best way to cook pasta

This is the best way to cook pasta, you can comment if you like and tell me how your mother made it.

  • Start with a pot of boiling water with only salt in it, just enough to taste it so it gives the pasta some flavor. Never add oil to the water, I see so many people especially home cooks adding oil to cooking water, I'm told it helps keep the from sticking. It does not.

The only thing it does is coat the pasta when you remove it from the water and acts like a barrier keeping the sauce from soaking into the pasta. Water and oil don't mix they separate.

  • OK so you bring the pot of water to a boil, you add the pasta and stir it. now you might have to play with the pasta siring it and pushing it down if it's to big for the pot, don't worry as it softens it will sink into the water.
  • Now keep stirring the pasta, that's what keeps it from sticking together or to the bottom of the pot. Have your sauce in another pan heating up or you can make a quick sauce while the pasta is cooking.
  • Cook the pasta until it is al'dente, this means its not mushy and you can bite it, this also helps with digestion and if you are diabetic like me it helps your body digest it slower so it's not just a big bunch of starch hitting your blood stream at one time, spiking your sugar levels sky-high
  • Now remember a 1/4lb of dry pasta is one serving especially if you are diabetic or watching your weight.
  • Once the pasta is done take it out of the water, use a spoon or tongs or whatever you have. Do not drain it or wash it under water. Add it directly to the pan with the sauce in it. Turn the flame on low if it is not already. This helps the pasta to finish cooking especially if it's really al'dente. Toss it around for a minute or two the plate it. That's it's done.
  • If you are cooking the pasta ahead of time then drain it,do not wash it or oil it. Lay it out on a pan preferably a sheet pan and let it cool. Then you can put it in the refrigerator for another time.

Ok, we have been doing it wrong all this time. We add olive oil to flavor our spaghetti. Now we know not to do that. Unfortunately, my wife is has Celiac disease so we only eat gluten free spaghetti (Barilla). Does this method still apply given this special type of pasta?

Yes sure, I like to eat gluten free pasta a little underdone I find it gets mushy fast if you don't watch it.

We do too. It only tastes good for one meal too. Leftover gf pasta tastes bad to us.

I have always washed it after cooking so now I will take your advice and leave it be.
Now I am eagerly going to wait for your sauce recipes. Any tips on a seafood pasta sauce? or any sauces for that matter- LOL

Also washing it rinses all of the starch and flavor off the pasta and right down the drain.

Good point with the starch. It is only now I realise how healthy starches really are.
