Picking a Niche is way easier than most people think, the problem comes in with picking the problem within that niche that you wish to solve.
Just pick something! What ever interests you for the moment. Now the work begins.
What you will want to do is sketch out your target audience. What does that person look like? What information are they looking for to solve the problems that they are Googling? You do know that Google answers questions right? That's why I call it the magic 8 ball.
You know that toy that you ask a question of and then shake it a bit to get your answer?
I digress, LoL.
Once you know who your customer is then it is a matter of finding a group of keyword phrases that surround the questions that person would be asking to get solutions to the problems they are facing.

Here is an example: (I haven't done any Jaaxy testing with these keywords so don't go making a blog around this unless you test it out first)
Dress Shoes For Business Women - Niche
The problems - Women need nice shoes that are comfortable to wear for long periods of time. Some business women have to stand, some sit at a desk. Some wear dresses or suits, some have to wear formal attire from time to time, some wear only pants.
They need to know how to choose shoes to match certain outfits, they need quality shoes, they need shoes that look expensive but aren't, they need to know how to buy these shoes for long term comfort, etc.
Some examples of keyword phrases I might target: How to pick the best shoe to match your little black dress. "Brand name of quality flat" the miracle shoe for your everyday pant suit? Choosing the perfect flat for everyday comfort. Stylish flats that go with every outfit. Specific shoe brands+solution to a problem
Using Jaaxy - I look for phrases that have less than 50 urls with the phrase in the title, at least 10 specific searches and over 90 for buying potential.
In real estate the slogan is location, location, location; in marketing it is solution, solution, solution....
Now go solve someone's problem :)
