Getting ranked in google...the bane of my existence

I finally have my site set up the way I want, where I can add posts to my pages. However, I think the way I have it set up may be affecting my ranking in google.
My pages are 'categories', so I assign each post a categorie and it adds them in order to the correct page; which is a category on my menu bar.
Would I be better off making my categories pages again, then using a sub domain for each post I want to add to that page and a category? And using a category side bar for folks who come back wanting to find more info.

I know this is actually a question, but it was too long but put in the question area. And this really is the bane of my existence so far. On top of that I got rejected by google adsense for not enough content. I have more content to add, but I'm wondering if my website set-up is adverstly affecting adsense approval.
