If you are an advanced user, I don't see why Wordpress is difficult for you to manage. Wordpress is the easiest platform for newbies. Plugins are there to help you design your website even easier. There are tons of training available here about Wordpress that are simple step-by-step to follow. Maybe, your focus is something else rather than learning how to build your site using Wordpress. Help is available 24/7...maybe you need more patience and perseverance.

I find that there are a lot easier programs to use, but for just my content and photos, it works great. I don't get into doing a bunch of fancy stuff on my site, just the basics. I figure if people came to read my post, they won't care if I have a bunch of flashy stuff on there.

You are focusing on colours where you need to focus on content

3 Different niches is not a good idea just focus on one niche

WA teaches you to build a authority site which means writing about 3 x 2000 word articles every week for a long time

Dong this in 3 niches would be impossible

Write content because pretty does not sell, no one cares what colour your site is, they are only interested in what problem it solves

Wordpress is a pain indeed if you are an advanced user.
It has given headaches to many of us.

What helps is a good professional theme that meets your needs. Many of them come with a trial or lite version, so you can test them first.

If you are used to doing your own programming then WP is not good, to say the least, but for those with no knowledge of site building, it is an easy option.

Just a thought. Have you tried Yoast. I know Word Press is the preferred site builder here at WA.

After backing up my site, I have tried Rank Math and Yoast. I am currently experimenting with Yoast now.

I also have found that theme's can cause a few headaches here and there.

These all can be frustrating at times.

I understand the frustration. But my friend you have to take it slower. You jave to take the time. Go back to the training. Ask questions in the live chat, Google your theme with the issue you're going through. There's always a solution to every problem. You just have to look for it.

Yeah, it could be very annoying, I have the same troubles in the start, but after you pick the correct Theme and find the logic behind, you will be ok with that, just be patient, it will work in the end:)

Rather than messing around trying to change colours on your site etc why not just get to work & start publishing content? Your site doesn't need to look perfect - instead if you are not happy with your theme just find another one & change it. Don't make life harder for yourself than it needs to be :)
