Greetings To All,

For the rest of this year, I'll be writing weekly posts, of my Healthier Me Challenge!
In each of the posts, I'll be sharing a variety of things: my weekly goals; new recipes; excerpts from books I'm reading; and a few mental obstacles that I'm fighting, to name a few. My hope, is that as I share my journey, I will encourage, inspire and motivate others to reach their Best Self!!!

Weekly Goals:
Instead of focusing on words like "can't", "don't" and "bad", I decided to make some changes. So, each week, I'll adopt a healthier habit, and eliminate an unhealthy habit. It can be anything! The only rule is to adopt AND eliminate!

Healthy Habit to Adopt: Vegetarian diet

Update:
Well, apparently I'm sick...I thought the fatigue I was experiencing over the weekend was just that, but I had body aches and the dreaded soar throat yesterday. But I'm grateful that I can take the day to rest a bit.

This is my 2nd week into eating vegetarian; I've craved meat a few times but nothing too serious but I'm enjoying finding "new" recipes. Since I enjoy snacking, I'm looking for any healthy alternatives and came across one for energy bites.

These are great if you start to feel just a pang of hunger, but don't have the time to grab a full meal. I think I'll add cranberries for my next batch.

Side Note: I wanted to give the recipe, but I received a "warning" that my post was not unique and was found elsewhere online. If anyone is interested in receiving the recipe, just shoot me a PM.

Awww Veronica, just thanks it easy my lovely. You've got greater strength than me switching to veg diet. I was veg for a whole year many moons ago, and looooved it. The problem was when I went back home for visits, where my mum only cooked meat and the whole family disapproved, and I broke that pact.
You are doing soooo well!! I expect as I'm not a great cook (hate cooking, that's why I'm not asking you for the recipe), my main concern would be to have to prepare 2 or 3 different sets of meals every day (!!!).

Well, in one point we differ: I don't think I will ever go vegetarian. I love meet too much. But, I too have at least two days a week without meet. That's when I'm eating fish.

I love meat, too. I'm not going vegetarian for life, this is just for a short period perhaps a month or two. Gong forward, I'll probably have a mostly vegetarian diet with some meat in between, especially fish.

You are doing great yer majesty. I don't have the courage to go all vegetarian. I was going good and lost 20 pounds before vacation. Then I got sick with diverticulitis before vacation and the just ate whatever on vacation and came back about 8 pounds heavier. I still haven't gotten back on track yet either. I'm sorry you are feeling sick. I will pray you are better soon. :). Xxoo

I think there's a law that states that it's okay to gain weight when you're on vacation, especially in Europe, lol.

I really do love meat, but with the right ingredients and seasoning I find that it's not something I miss too much. My biggest issue in terms of food really has to do with sweets.

I'm sure you'll get back on track soon, M'ady I'll be praying for you as well.

I find mushrooms make a taste like meat when you use them in soups and casseroles. Are you allowed cheese because I love cheese and milk.

If it was a vegan diet I would not be able to, but since it's vegetarian I could. But in all honesty, I'm really not a big fan of dairy, I really do not like cheese or milk (almond milk is OK). I've tried all kinds of cheese, outside of pizza, I don't eat cheese.

I didn't know anyone didn't like cheese! Lol. I think I should have been a mouse. I love ❤️ it.

Food feeds the brain. And creates the attitude for a good day or a bad day.

Since I'm not trapped in an office cube for 8 hours anymore, I now have a goal of spending more time outdoors and engaging in more physical activity

I never realized the impact of a good diet is so beneficial to productivity. I am on the last day of a 30 day diet. I feel great with lots of energy. Plus, I have lost weight.
