Greetings To All,

For the rest of this year, I'll be writing weekly posts, of my Healthier Me Challenge!
In each of the posts, I'll be sharing a variety of things: my weekly goals; new recipes; excerpts from books I'm reading; and a few mental obstacles that I'm fighting, to name a few. My hope, is that as I share my journey, I will encourage, inspire and motivate others to reach their Best Self!!!

Weekly Goals:
Instead of focusing on words like "can't", "don't" and "bad", I decided to make some changes. So, each week, I'll adopt a healthier habit, and eliminate an unhealthy habit. It can be anything! The only rule is to adopt AND eliminate!

Week #12
Healthy Habit to Adopt: Vegetarian diet
Unhealthy Habit to Eliminate: lack of exercising

Update:

Last week, I announced that I would be starting a vegetarian diet. For now it just feels right; I guess when my body yells, "Stop! Enough with the vegetables already!" I'll stop. Since I still have a few meat items in the freezer, I'll go "full throttle" starting April 2nd.

Morning Ritual:

Over the past few months, I've been reading about the benefits of apple cider vinegar (ACV); apparently it can do just about anything from flushing out toxins in your body and clearing your skin to jump starting your car (the car theory is just speculation, but I wouldn't be surprised). I bought some bottles months ago, but after a few days, never used it again. After reviewing a blog in Site Rubix that discussed the health benefits of ACV, I decided to give it another shot.

Commercial Break: If you haven't visited Site Rubix to give and received comments and feedback...ah...do it! Seriously! You help others by leaving valuable comments, you earn credits to receive comments and feedback, and you can learn a lot in the process. Now back to our regular scheduled programming...

First thing in the morning, I have my morning "tea" (it's not really tea, but it's better than saying hot-water-with-other-stuff-drink).

- 10-12 ounces of hot water
- 2 tablespoons of ACV
- a squeeze of lemon
- 2-3 tablespoons of honey
- a dash of cinnamon

Just 4 words: Yummy for my tummy!!!

Here's one yummy treat I had last week for breakfast:

Slices of banana, oranges, apple, strawberries, peaches, walnuts and Chia seeds (please don't ask about the Chia seeds...I have no idea).

Theses sweet potato fries make a delicious snack or could make a nice alternative for o white potato fries (something dear to my heart, but I also like to add an unhealthy amount of ketchup and salt). Just season them to your liking and bake. Certain stores sell these, but I prefer to just buy a fresh yam so then I know nothing was added that I may not want. I find that boiling them first makes them bake faster. Either way, they are scrumptious!!!

That's all for now folks! I'll leave you with a poem:

Whenever you're in doubt
and can't seem to find your way;
just grab a bottle of apple cider vinegar
it will surely save the day!

Strive to Thrive,
Veronica

:-)

Great post!
Ed

Thanks Ed!!!

Good morning Veronica,

!!! YES. Well done.!!!
Just a little something. I also drink 2 soup spoons of Apple Cider vinegar twice a day. You must take care that is has mother otherwise it does not have the health benefits = not sifted.

Greetings from the south of Spain, Taetske

Hmmm....perhaps I'll drink that in the evening as well. Thanks for the tip, Taetske!

I should be doing this with you!

The more the merrier!

Well done Veronica that is truly amazing you will be feeling really good about things.

Thank you, Alex

Hi Veronica,
Sounds like you've got everything under control. I'm glad you are doing so well on your journey. I like ACV in water first thing in the morning also. I've never tried Sweet Potato fires at home, I'll have to try them, they look good!! I've had to suspend some of my yoga workouts,(just particular moves) I'm having rotator cuff issues...OUCH!!! I'm still doing the ones I can do. I don't plan on giving up on it. Typing is getting difficult at times, but I'm pushing through!! Keep up the good work. I can't wait for your next update!!
Have a great week, take care my friend.
Mary

Always great seeing that lovely smile of yours, Mary!

I haven't done Yoga in a week, so I'll need to resume...I'm proceeding with caution (which is my way of say - I'm scared!) I'm so glad that Tyrellch started his health challenge because it encouraged me to start my own. More than anything, it's helping me to stay consistent, and even when I "fall off" I know I still have create a post about it...and that people will be reading it as well - so I'm being challenged on all fronts!

Thanks for always taking the time to encourage me on my journey, Mary.

Great Veronica. Your regimen rivals Tyrells!

Hmm...give me another few weeks, Papa.

Can't believe it's week 12 already, Veronica! How the time flies!:))

I know, it's crazy!

I wanted to join in with you on the 2, 3, 5....now it's the 12. And I am in my second. Not too bad though...lol:)

You started, so that alone is great, Vera!

The Lady V's are kickin' butt!!!

Exactly the place....lol...
Thanks...Might start sharing the stuff starting next week.To be sure I won't backslide.:))

The Lady V's will lead the way to Victory!!!

BeautIful!...:)))

I bought some apple cider vinegar about a month ago and it was pretty strong stuff for first thing in the morning. I know it's super healthy for you so you've convinced me to try it again after doctoring it up your way:)
Erica

Yeah, the stuff is pretty powerful, which is why I stopped using it. I'm not one to measure things when I cook, but for ACV I find that I need exactly 2 tablespoons, no more. The honey, lemon, and cinnamon really help as well, but I may just use the lemon for a separate "tea" instead.

I'm hungry now!!

Mee too...and I just ate!!!
